Let it cool down. Do not takethe peel off, cut the peaches into quarters and place them into jars. Cover with the cold syrup and close the jars. Place them in a deep pot and cover with water. Boil the jars in bain-marie for 25 minutes. Cut the peaches in half, remove part of the pulp and add it to the mixture prepared before. Stuff the two halves with this mixture. Sprinkle the peaches with sugar and put an amaretto biscuits onto\u00a0 the top of each half.
